DATE REESES CUPS
These have been my absolute addiction lately! They are so easy, so delicious and healthy too. If you haven’t used dates in your cooking yet, you have to look up some more recipes after you try this one - they are so versatile and such an easy swap to keep things sweet without a ton of sugar.
Ingredients:
Trader Joes Organic Pitted Medjool Dates
Lily’s dark chocolate baking chips (no added sugar - these have totally changes the game for this chocolate lover)
Crunchy Peanut Butter
Instructions:
Split the dates in half (not all the way through, just enough the you can stuff them and fold the sides back up)
Scoop about 1/2 of spoonful of peanut butter into each date
Melt chocolate chips, stir, and drizzle into the dates
Fold the dates back up, place in a container, and freeze!
I love eating these frozen because it takes a little more time to enjoy them, but a friend of mine skipped melting the chocolate and just added the chocolate chips to eat right away - another yummy option!
